Best way to make a gluten free spanakopita using rice paper!

Gluten Free Spanakopita
Ingredients
1/3 cup shredded mozzarella cheese
1 small package of spinach
1/2 cup of feta crumbled
2 eggs
1 tsp garlic powder or fresh garlic
1 tsp Salt
1 tsp Pepper
8 Rice Papers
Cooking Instructions
Preheat the oven to 395 degrees.
Use frozen or chop your spinach and squeeze out the water, add in two eggs beaten, the two cheeses and seasoning, Combine them.
Pour your hot water into a large shallow dish. You want it to be warm.
One sheet at a time, dip the rice paper into the water for about 10 seconds until just malleable.
Place a scoop of the filling in the middle of the rice paper and fold them like you would a burrito (fold one side in, then the bottom up to the middle, then the other side, then the top.)
Repeat until you run out of filling.
Wipe the tops of each spanakopita with olive oil or egg wash and add sesame seeds on top.
Put them on a pan for five minutes on medium to get the bottom a bit crisp then transfer them to the oven.
Bake about 30 minutes. Then two minutes on broil. You want them golden brown burnt :)
Let them cool- or don’t. Totally worth burning your tongue for!
Serve them with your favourite tzatziki sauce!
